Creamy, cozy, and fall-ready, this one pot Tuscan Chicken Spaghetti for One is quick to make, easy to clean up, and packed with bold garlic-parmesan flavor. Designed for solo cooks with no leftovers.
Ingredients
1 boneless skinless chicken thigh or breast, diced
2 oz dry spaghetti (about 1/6 box)
2 tbsp sun-dried tomatoes, chopped
1 cup fresh spinach
1 clove garlic, minced
1/4 cup heavy cream
3/4 cup low sodium chicken broth
2 tbsp freshly grated parmesan
1 tbsp olive oil
Salt & pepper, to taste
1/4 tsp Italian seasoning (optional)
Instructions
1. Heat olive oil in a medium skillet over medium-high. Season diced chicken with salt, pepper, and Italian seasoning.
2. Add chicken to skillet and sear 3–4 minutes until golden. Don’t stir too often.
3. Add garlic and sun-dried tomatoes. Sauté 30 seconds until fragrant.
4. Pour in chicken broth and add dry spaghetti. Stir and simmer uncovered for 8–10 minutes, stirring occasionally.
5. Add heavy cream and spinach. Stir until spinach wilts and sauce thickens, 2–3 minutes.
6. Stir in parmesan cheese. Taste and adjust seasoning.
7. Serve hot with extra parmesan on top if desired.
Notes
Make it vegetarian by using white beans instead of chicken. For extra crispy chicken, sear longer without stirring. Try arugula or kale if you’re out of spinach.
