Description
A solo-friendly one pan dinner featuring hot honey garlic glazed chicken with roasted zucchini. Fast, bold, and mess-free.
Ingredients
1 boneless chicken thigh
1 small zucchini, sliced
1 tbsp hot honey
1 tsp soy sauce
1 clove garlic, minced
1/2 tsp vinegar
1 tsp olive oil
Salt & pepper to taste
Instructions
1. Preheat oven to 425°F.
2. Mix honey, garlic, soy, vinegar, and oil in a small bowl.
3. Toss chicken and zucchini in sauce.
4. Spread on a small sheet pan lined with parchment.
5. Roast for 20–25 minutes until caramelized and golden.
6. Let rest for 2 minutes before serving.
Notes
- Use chicken breast if preferred.
- For extra spice, add chili flakes.
- Zucchini can be swapped with green beans or mushrooms.
