Description
Spicy-sweet solo dinner made with chicken, roasted veggies, and hot honey — all on one pan.
Ingredients
1 boneless skinless chicken thigh
1/2 zucchini, sliced
1/4 red onion, sliced
1/2 bell pepper, chopped
1 tbsp olive oil
1 tsp garlic powder
Salt and pepper, to taste
1.5 tbsp hot honey
Instructions
1. Preheat oven to 425°F.
2. Toss chicken with olive oil, garlic powder, salt, pepper, and 1 tbsp hot honey.
3. Place chicken on one side of a sheet pan. Arrange veggies on the other side. Drizzle with remaining oil and season.
4. Roast for 22–25 minutes, flipping veggies halfway through.
5. Drizzle everything with remaining hot honey and serve over your choice of base.

- Use parchment for easier cleanup.
- Add lemon or yogurt at the end for balance.
