Description
This one pot spaghetti recipe without tomato sauce is creamy, garlicky, and perfectly portioned for one. Made in a single pan with no draining and big flavor.
Ingredients
3 oz spaghetti (about ⅓ of a box)
1 tbsp olive oil or butter
1 garlic clove, minced
1½ cups chicken or veggie broth
2 tbsp grated parmesan or pecorino
Salt and black pepper, to taste
Optional: red pepper flakes, lemon zest, chopped parsley
Instructions
1. Heat olive oil or butter in a small pan over medium heat.
2. Add garlic and sauté until fragrant, about 30–60 seconds.
3. Add spaghetti and broth. Stir well and bring to a simmer.
4. Let cook uncovered for 8–10 minutes, stirring often to prevent sticking.
5. Once liquid is mostly absorbed and pasta is tender, remove from heat.
6. Stir in parmesan, pepper, and optional extras.
7. Let rest for 1–2 minutes to thicken slightly, then serve hot.
Notes
- Break spaghetti in half if needed to fit in the pan.
- Use veggie broth for a vegetarian version.
- Nutritional yeast and oat milk make a great dairy-free swap.
- Stir often to prevent sticking.
