Description

One-Pot Pasta al Forno for one—easy, cheesy, and no cleanup stress. Perfect solo comfort food you can make in 25 minutes.


Ingredients

85-115g rigatoni pasta

1 cup marinara sauce or tomato passata

75g mozzarella cheese, grated

25g Parmesan or Pecorino, grated

Salt, to taste

Black pepper, to taste

½ to 1 cup reserved pasta water

Optional: cooked sausage, sautéed mushrooms, spinach


Instructions

1. Boil pasta 2-3 mins less than package directions. Reserve ½ to 1 cup pasta water.

2. Drain pasta. In same pot or skillet, toss pasta with sauce and half of both cheeses.

3. Add pasta water gradually to reach desired sauce consistency.

4. Transfer mixture to baking dish or leave in oven-safe skillet.

5. Top with remaining cheese.

6. Bake uncovered at 350°F (180°C) for 20–25 minutes until bubbly and golden.

7. Serve immediately and enjoy!


Notes

  • Use freshly grated cheese for best melt.
  • Cook pasta al dente to avoid sogginess.
  • For variety, add cooked sausage, sautéed veggies, or herbs.
