Description
One pot chicken parmesan pasta made for solo dinners. Cheesy, comforting, and cooked in just one pan with minimal cleanup.
Ingredients
1 small boneless chicken breast, diced
1 tsp olive oil
1 garlic clove, minced
1/2 cup dry pasta (penne or rotini)
1/2 cup crushed tomatoes or marinara
1/2 cup chicken broth
1/4 cup shredded mozzarella
1–2 tbsp grated parmesan
Salt and pepper to taste
1/4 tsp Italian seasoning or dried basil
Instructions
1. Heat oil in a pan. Sauté chicken until browned.
2. Add garlic halfway through.
3. Stir in pasta, tomatoes, broth, and seasoning. Bring to a low boil.
4. Cover and simmer 10–12 minutes, stirring occasionally.
5. Turn off heat. Stir in mozzarella and parmesan.
6. Cover for 2 minutes off heat. Let cheese melt.
7. Taste and adjust salt or spice. Serve hot.
Notes
- Keep extra broth nearby in case pasta absorbs too quickly.
- To avoid cheese clumps, let pot cool 1–2 minutes before adding cheese.
