Ingredients

2 bone-in, skin-on chicken thighs

1/2 cup long grain white rice

1 garlic clove, minced

1 cup chicken broth

1 tbsp olive oil

1/4 tsp paprika

Salt and pepper to taste

2. Add chopped onion and garlic. Sauté until translucent.

3. Stir in rice, paprika, salt, and pepper.

4. Pour in chicken broth and bring to a boil.

5. Cover, reduce heat, and simmer for 18–20 minutes.

6. Turn off heat and let sit covered for 5 minutes before serving.

Notes

  • Use jasmine or basmati rice for a slightly different flavor.
  • If using chicken breast, cut in half and add halfway through cooking.
