Ingredients
1 boneless, skinless chicken breast
1/2 tbsp Cajun seasoning
1 tbsp olive oil
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
1/4 small onion, sliced
2 cloves garlic, minced
3/4 cup short pasta (penne or rotini)
1 cup low-sodium chicken broth
1/2 cup heavy cream
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Season chicken breast with Cajun seasoning.
2. Heat olive oil in a skillet over medium heat. Sear chicken until golden and cooked through. Remove and set aside.
3. In the same pan, sauté bell peppers, onion, and garlic until softened.
4. Add broth and cream, bring to a simmer.
5. Stir in dry pasta, cook uncovered, stirring occasionally until pasta is tender and sauce thickens.
6. Slice chicken and return to pan. Stir to combine.
7. Adjust seasoning, garnish with parsley, and serve hot.
