Description
This easy tofu breakfast scramble is made for one! It’s quick, satisfying, and perfect for solo mornings.
Ingredients
½ block firm tofu (7 oz)
1 tbsp olive oil
¼ tsp turmeric
½ tsp garlic powder
Salt & pepper to taste
Optional: ½ cup chopped spinach, mushrooms, or onions
Instructions
1. Heat oil in a nonstick pan.
2. Crumble tofu into the skillet.
3. Add turmeric, garlic powder, salt, and pepper.
4. Stir in any veggies.
5. Cook for 5–7 mins until golden.
6. Serve hot.
Notes
- Use extra-firm tofu for chewier texture.
- Add avocado or hot sauce for flavor.
- Stores well in the fridge for 1 day.
