Description

Cajun chicken soup with rice is bold, cozy, and ready in one pot. A solo-friendly spicy soup that’s easy to make and perfect for busy nights.


Ingredients

1 small chicken breast, diced

1/2 cup cooked rice (or raw)

1 tbsp olive oil

1/2 onion, chopped

1/2 bell pepper, chopped

1 celery stalk, chopped

2 garlic cloves, minced

1 tsp Cajun seasoning

1/2 tsp smoked paprika

Pinch of cayenne

2 cups chicken broth

Salt & pepper, to taste

Green onions & parsley for garnish


Instructions

1. Heat olive oil in saucepan over medium heat.

2. Add onion, bell pepper, and celery; sauté 4–5 minutes.

3. Stir in garlic, Cajun seasoning, paprika, and cayenne; cook 30 seconds.

4. Add diced chicken and cook 3–4 minutes.

5. Pour in chicken broth; bring to simmer.

6. If using raw rice, add now and cook 15–18 minutes.

7. If using cooked rice, stir in during last 3–4 minutes.

8. Season with salt and pepper; garnish with green onions and parsley.


Notes

  • Use any rice — adjust cook time accordingly.
  • For extra heat, add hot sauce at the end.
  • Great for leftovers; reheats well.
